Spiced Flaxseed Muffins

If your'e needing some extra fiber, these spice muffins are great! No grain or sugar. Here are two option- the second has half almond flour and half flax seed.

2 cups roughly ground flax seeds -OR -1 cup flax seeds and 1 cup almond flour

2 tablespoons Pumpkin spice

1 tablespoon baking powder

1/2 teaspoon salt

1/3 cup powdered erythritol

5 eggs

1/2 cup water

1/3 cup melted but not hot coconut oil or butter

2 teaspoons vanilla extract

Mix flax seeds, erythritol, pumpkin spice, baking powder and salt together. Set aside. Put eggs, water, oil, vanilla into a blender, mix on high for 30 seconds.

Mix dry ingredients with wet.

Prepare 12 muffin tins with paper liners or spray with oil. Spoon into muffin pan almost to the top.

Bake at 350 for 14-15minutes.
